Curious question - does only ONE of your shrimp have eggs? They both have eggs. My curious questions- since they act like a "mated pair" what would happen if I added one more? Would all three carry eggs (like peppermint shrimp), or would the new one be banished to the far side of the tank?

No, stick with the pair. There was an article, I think at advancedaquarist.com,which detailed scientific study that suggested that a pair will kill off any extras around.
